Ingredients
- 1/4 cup fennel seeds
- 1/4 cup cumin seeds
- 2 tbsp coriander seeds
- 8 tsp black peppercorns
- 4 pieces star anise
- 4 pieces cinamon stick so... like maybe 2?
- 2 tsp white peppercorns
- 4 tsp whole cloves
- 4 tbsp ground coriander
- 1 cup salt
- 2/3 cup sugar

Instructions
- In a coffee grinder or food processor, grind the fennel seeds, cumin seeds, coriander seeds, black peppercorns, star anise, cinnamon stick, white peppercorns and whole cloves. Transfer to a bowl and stir in the ground coriander, sugar and salt.
Recipe Notes
I'm saving this here to experiment with later - probably doing a 3 day cure and then a 2-4 hour applewood smoke...
adding bay leaves (crushed) would also work nicely
