Ingredients
- 1 shad filet
- dry thyme
- bay leaves finely crumbled (not ground)
- lemon juice to taste
- salt
- pepper

Instructions
- clean and dry shad - lay skin side down in baking dish and coat both sides with olive oil
- sprinkle thyme, bay leaves, lemon juice, salt & pepper over shad - let sit for an hour
- put baking dish under preheated broiler for 3-5 minutes, flip fish, cook another 3-5 minutes
- remove from broiler, flip fish back onto skin - check thicker parts of shad - you may want to broil for another 3-5 minutes depending on how you like fish (shad is pretty oily, so you can get away with cooking a little more)
- portion and serve immediately - top with whatever you like... cilantro puree, anchovy cream sauce... whatever
