this is a work in progress – attempting to document what I did in 2014
Ingredients
- 1 cup white vinegar
- 1 cup water
- 1/4 cup sugar
- 2 tbsp salt
- 1 allspice berries
- 2 cloves
- 1 bay leaf
- 6 black pepper corns
- 10 coriander seeds

10/7/16 - too much clove, lowered the cloves from 4 to 1, and lowered allspice from 2 to 1
12/15/16 - realized that if the beets are undercooked, I can correct that by vacuum sealing the beets (without liquid) and sous vide at 185F for 30 to 60 minutes - return beets to pickling liquid
