need to write up something about beet preparation
10/7/16 – too much clove, lowered the cloves from 4 to 1, and lowered allspice from 2 to 1
12/15/16 – realized that if the beets are undercooked, I can correct that by vacuum sealing the beets (without liquid) and sous vide at 185F for 30 to 60 minutes – return beets to pickling liquid
