mushrooms
- melt butter in a skillet over medium heat and add mushrooms,leek,salt, pepper if you want - stir occasionally - this should be about 15 minutes
- add sherry & thyme - when liquid has reduced and thickened add salt & pepper - remove from heat
clafoutis
- heat oven to 375F
- whisk eggs until frothy - whisk in milk until combined - whisk in flour
- pour mixture onto mushrooms, sprinkle top with gruyere
- bake in oven for 30-40 minutes, or until surface is golden and the eggs have set
- serve warm or room temperature
