- 3 green onions whole, trimmed
- 2 cups green onions chopped
- 1/2 cup soy sauce
- 2 tbsp salt
- 6 star anise whole
- 2 1/2 tbsp sugar (or 2x1.5inch cubs chinese yellow rock sugar)
- 1/2 tbsp sichuan peppercorns
- 2 plum tomatoes large - cut into 4 wedges
- fresh ground white or black pepper
- 1 pound chinese wheat noodles (eggless - shandong la mian)
- 3 baby bok choy rinsed, halved, trimmed
- chopped fresh cilantro
- pickled mustard greens
